What is Gluten?

What exactly is gluten, anyway?

Gluten is a protein found in grains such as wheat, barley, and rye, and it plays an important role in many foods, acting as a binding agent and providing the elastic texture in baked goods. However, for some people, consuming gluten can result in serious health problems.

Gluten can cause an immune reaction in people with celiac disease or a sensitivity to gluten, leading to damage in the small intestine. Symptoms of gluten intolerance can range from mild digestive discomfort to more severe health problems, such as malnutrition and an increased risk of other autoimmune diseases.

Despite the fact that not everyone needs to avoid gluten, many people choose to do so for various reasons. Some people with celiac disease or a gluten intolerance find that eating gluten-free foods helps them manage their symptoms. Additionally, some people without any medical conditions choose to eat gluten-free for perceived health benefits or because they believe it will improve their overall wellness.

In recent years, the demand for gluten-free foods has increased, and many food companies have responded by producing a wide range of gluten-free options. Examples of gluten-free foods include: rice, potatoes, corn, beans, lentils, quinoa, fruits, vegetables, and nuts. There are also many gluten-free baked goods and processed foods available, such as gluten-free bread, pasta, and snacks.
